For Christmas Chewy Chocolate Chip Cookies Recipe
The ultimate chewy chocolate chip cookie that melts in the mouth! A simple and easy recipe. Be careful leaving these out for Santa, he might come back on Boxing Day!
Makes 18 Cookies
Ingredients
2 cups plain flour
1/2 teaspoon baking soda
1/2 teaspoon salt
170g unsalted butter melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups chocolate chips or chocolate chunks
Instructions:
Heat: Preheat oven to 165C and line trays with baking paper.
Sift: Sift together the flour, baking soda and salt.
Mix: In a bowl, mix the melted butter, brown sugar and white sugar until well blended.
Beat: Beat in the vanilla, egg and egg yolk until light and creamy, then add the sifted ingredients until just blended.
Stir: Stir in the chocolate chips or chocolate chunks by hand. Use a tablespoon to make dough balls. Flatten on baking tray with fingers. Make sure cookies are 8cm apart.
Bake: Bake for 12-14 minutes until the edges are lightly browned. It's better to under-cook than overcook!
Cool: Remove from oven and allow to cool on trays for a few minutes before transferring to wire racks to cool completely.
